On Saturday, Cain Velasquez defeated Brock Lesnar at UFC 121 to become the “Heavyweight Champion of the World” in a fight that had been much-anticipated by fans of the sport. For those not in the know, mixed martial arts has been growing in popularity since the 1990s, spawning all the expected signs of a booming niche market: professional organizations, products and sponsorships, video games, a reality TV series and fan websites.
